blog off/cook off, episode 4: Thai Chicken

I'm a bit excited about today's recipe because I get to use this clever little tube of Gourmet Garden goodness....


Yes, it's lemongrass, ginger, coriander and chilli in one handy tube.
Genius.

So we're going to use it in one of my family's favourite meals,
Thai Chicken Larb

Here's what you'll need to whip up your own dish at home:

500 grams chicken mince
the juice of 1 lime
1 teaspoon brown sugar
5 teaspoons of fish sauce
Gourmet Garden Thai Seasoning
Gourmet Garden Chunky Garlic
a lettuce

and optional vermicelli noodles 
(for the kids and the carb lovers out there)


Step One:
Mix together your brown sugar, lime juice and fish sauce.
Set this aside.

Step Two:
Fire up the frypan and throw in your mince.
Cook until it's brown.

Step Three:
Push the mince to one side of your frypan using a wooden spoon
and squeeze in a tablespoon of Chunky Garlic and a tablespoon of Thai Seasoning.





Step Four:
Stir the herbs together, to release their yummy flavour
before mixing them in with the cooked chicken mince.
Add in the sugar, lime juice and fish sauce mixture....


And your done!
Yep, it's one super quick and easy meal,
especially when the Gourmet Garden tubes are involved...
no more chopping up lots of different herbs.
Just squirt and go.



Now, there are a couple of different ways you can serve this meal.
You can cook your vermicelli noodles while the mince is cooking
(put the noodles in a bowl and cover in boiling water for 10 mins)
and add them to the mince mixture at the end.
Yummy!

Or, you can skip the noodles and serve the mince in lettuce cups like I have today.

Simply place about 1/2 cup of the mince mixture into a lettuce leaf, roll up and enjoy!




On a random side note, I don't know about you but Chunky Garlic is fast becoming my favourite herb.  Partly because it's so easy to squeeze out of the tube but mainly because I don't have to chop up garlic anymore and worry about having stinky garlic fingers for ages afterwards. Totally winning!
